Yummy Blueberry Smoothie

If you need something to cool you off on a hot summer day, this blueberry smoothie will do just that. Enjoy! 

Ingredients

Serves 1 (of course you can double it to share) 

1 Cup Blueberries

1 Cup Baby Spinach

1/4 Cup Unsweetened Coconut Flakes

1 Tablespoon Honey

1 Teaspoon Chia seeds

1 Cup Coconut milk (you can use any other milk of choice) If you want a more coconut taste use coconut milk) 

Instructions

Combine all ingredients in a food processor or blender. Blend well and serve! Its that easy.

Strawberry Avacado Ceprese (Summer Salad)

Ok guys here it is!!! Im so excited to share this yummy summer salad with you guys!! This salad can be served as a side salad or just eat it for lunch (like mu husband did today). Let make it! 

Ingredients

Serves 4

1 1/2 sliced strawberries

1/2 cup roughly chopped spinach

1/3 cup fresh roughly chopped basil

1 Avocado cubed

1 Cup Mozzarella cubed

1/2 cup Balsamic Vinaigrette

 

Instructions

Slice strawberries, chop spinach, basil and cube the avocado and mozzarella cheese. Add all ingredients to a serving bowl and drizzle the balsamic vinaigrette and mix. 

SERVE & ENJOY!

Day trip to Kimswick

This past saturday my mom, sisters and some ladies from my church took a day trip to Kimswick, MO. Its an adorable little Christmas town filled with the houses that are decorated. They also have great shops, a hot chocolate stand and Santa made an appearance. Here some pictures i snapped from our little trip. ENJOY!

Hello! Hello! It's been a while since ive updated this hear blog. I have alot of things planned this up coming year for My Tasty Table so stay tuned. For the next couple months ill be posting more holiday inspired meals and maybe a little cooking video too! In the mean time if you havent read any of my previous posts, please do. Oven Meals {Lemon Drumsticks w/ Cauliflower Florets}

Sometimes Monday's can be a little difficult to get a yummy meal together for dinner. I try my best to plan something that is really easy and doesn't take to much time. 

I decided to go with this easy oven meal because I can literally throw everything in it and bake.  Enjoy!  

 

I used chicken drumsticks but you can use any other meat. drizzle olive oil first before applying seasonings.   Seasonings I used : salt, dried oregano, and smoked paprika.

4 lemons, 1 onion sliced, 9 cloves of garlic {do not chop}, 1 bag of cauliflower florets, about a cup of grape tomatoes.   Put all the ingredients in a large baking dish {casserole dish}, bake for 1 hour at 375 degrees. Every 15 minutes or so baste the chicken to make the chicken tender.

quick shredded pork nachos

Last Sunday me and hubby had my amazing family over for some pork tacos... I'm sure you can only guess that it was absolutely DELICIOUS!  

i ended up having some leftovers and made these precious N A C H O S. It was simple and took no time to make! 

Enjoy!  

This what I used  - Serves 4 Generously "Hint of Lime" tortilla chips shredded pork   1 can of corn   chopped cilantro  diced onions   lime  (yes more lime yummy)  pinto beans (leftover from Sunday's family  dinner & you can use black beans)   Mexican Monterrey cheese (chihuahua cheese)   Directions preheat your oven to 375 degrees with a casserole dish layer your chips first than start adding your toppings of cheese. Finish each layer off with cheese. Once you get to your desired amount, cover the top with more cheese. Put in the oven for 20 min or until cheese is nicely melted. Serve and enjoy!  Make sure you put some hot sauce on it!! I use Valentina!
