Sausage & Egg Breakfast Bowl w/ Sauteed Kale


Happy Wednesday!!!! Guys as you can probably tell already, im so into quick, yummy meals that are healthy and fulfilling. Here is one that I hope you can enjoy! 

Lets Cook! 

(1) Trader Joes Chicken Sausage (Smoked Andouille) 

(1) Handful Chopped Kale 

(2) Organic Brown Eggs 


Salt & Pepper to taste 


Cut your sausage to medium size and sautee with olive oil. After sausage is cooked, scramble your eggs. Set aside. Sautee chopped kale in olive oil. Assemble in a bowl of your choice!!! 






3 ways to keep yourself organized in your kitchen.


Happy Tuesday Guys! Hope your week has started off great. Since having a baby I have been trying to stay organized and keep things tidy in my kitchen. I love being able to have all my yummy things ready and easy to grab. I believe it will enhance your cooking experience.  Here are 3 ways to keep yourself organized in your kitchen. 

1. S P I C E S - When your cooking you want to make sure that everything is within reach. So having your favorite spices organized and easy to access can make your cooking experience super easy and enjoyable. Its also good to have the spices you love and use all the time in the front! 

2. D I S H E S - Having your serving dishes at arms reach can be great so you can plate your meal. Its all in how you organize your dishes in your cabinets.Make sure your heaviest cookware is on the bottom and not so heavy cookware on the top. You dont want to have your heavy cookware too far from you. 

3. C O N T A I N E R S - Since I have a small kitchen, I have to find a way to keep my dry goods stored. As you can see in the picture above i used small 8 ounce mason jars. Not only is it cute looking but it also helps me see exactly what I have. Having the jars also helps me avoid going through my cabinets looking for bags of dried goods. If you have a small kitchen or small cabinets this is definitely something you can do.
















Slow Cooked Beef Sirloin for the win


Its been a while since I have posted a recipe on here, but hey im back! alot of things have changed for me... like for one, me and my husband welcomed our little beautiful baby boy Martin Josue Espinoza II. Ill be sharing my baby thoughts on my "Baby Page"  CLICK HERE for some pre- baby thoughts. 

Well here is a yummy quick recipe for ya.... The key is the amazing crockpot. ENJOY! 

(Ingredients are all to taste and depending on how much you personally need)


Beef Sirloin



jasmine rice 

1 tablespoon Tumeric

1 tablespoon Cumin 

1 tablespoon Olive Oil

Green Beans 

Pine nuts 



Season beef with salt, pepper & olive oil. Slow cook beef in crock pot for 6 hrs. During the last 30 minutes of beef cooking time, cook turmeric rice. Saute green beans in olive oil along with pine nuts. Serve. 


Turmeric Rice

Add olive oil, turmeric, and cumin to a pot. Add rice and stir until seasonings are well incorporated into rice. Add 3 cups of water. Let boil and turn down to low and let rice simmer. Serve and Enjoy. 



Yummy Blueberry Smoothie


If you need something to cool you off on a hot summer day, this blueberry smoothie will do just that. Enjoy! 


Serves 1 (of course you can double it to share) 

1 Cup Blueberries

1 Cup Baby Spinach

1/4 Cup Unsweetened Coconut Flakes

1 Tablespoon Honey

1 Teaspoon Chia seeds

1 Cup Coconut milk (you can use any other milk of choice) If you want a more coconut taste use coconut milk) 


Combine all ingredients in a food processor or blender. Blend well and serve! Its that easy.

Strawberry Avacado Ceprese (Summer Salad)


Ok guys here it is!!! Im so excited to share this yummy summer salad with you guys!! This salad can be served as a side salad or just eat it for lunch (like mu husband did today). Let make it! 


Serves 4

1 1/2 sliced strawberries

1/2 cup roughly chopped spinach

1/3 cup fresh roughly chopped basil

1 Avocado cubed

1 Cup Mozzarella cubed

1/2 cup Balsamic Vinaigrette



Slice strawberries, chop spinach, basil and cube the avocado and mozzarella cheese. Add all ingredients to a serving bowl and drizzle the balsamic vinaigrette and mix. 



My Favorite Pantry Staples

Happy Tuesday guys! Hope your having a good week so far. I wanted to take a few minutes and share with you 5 of my favorite pantry items. 

1. Black Beans - I really love canned black beans. You can add black beans to scrambled eggs, burritos, tacos, salads or make yummy black bean burgers. Black beans are high in protein if your needing that extra boost of energy. I always have a can or two in my pantry for a quick side or addition to any meal.

2.  Canned Whole Kernel Corn - Seriously I love, love corn! Its funny but my dad likes to tease me about how I put corn in everything. Well its true. I use corn as a side (its so good sauteed with some onions), in a black bean salad or in my favorite dish growing up, a nice bowl of rice and corn with butter, salt and pepper. You can also make it Mexican style (Elote) and add mayo, grated parmesan cheese and cayenne pepper. its so good! 

3. Corn Salsa - Yes! another corn dish but seriously this corn salsa is amazing. I like to put in my burritos for a nice tangy taste or serve it in a bowl as a dip! 

4. Double Roasted Salsa - This salsa is my absolute favorite. My husband likes to add this salsa to scrambled eggs it gives our breakfast an extra kick. This salsa also goes well in burritos, tacos, add it to your meat and let it simmer down and of course its yummy with tortillas chips! 

5. Minced Garlic - Minced garlic of course doesn't stay in the pantry but in the refrigerator.  I  use minced garlic for most of my dishes. I saute it with onions and add my meat to it. If you want to be fancy you can add minced garlic to soft room temperature butter and viola! you have garlic butter for your bread, toast or sandwiches. Minced garlic can also be added to olive oil and poured over a salad with a squeeze of lemon.

The Perfect Breakfast Sandwich

Have you ever cooked something so perfect that you literally didn't want to eat? Yeah that happened. However I did want to eat it kind of quick because I was starving (preggo problems). Although this is probably the most simple breakfast sandwich you will ever make, its so yummy and perfectly tasty. I believe this sandwich took a mere 6 minutes to cook... HOW EASY RIGHT? 

Lets Make it! 

  • 2 pieces of multi-grain wheat bread 
  • 2 cage free organic brown eggs 
  • 1 cup of spinach 
  •  shredded Colby Jack cheese (to your liking)

Toast your bread, scramble your eggs with spinach. Season with salt and pepper to your taste. Add cheese and let sit until melted and make your sandwich. 

**I like to add a little hot sauce** 


Day trip to Kimswick

This past saturday my mom, sisters and some ladies from my church took a day trip to Kimswick, MO. Its an adorable little Christmas town filled with the houses that are decorated. They also have great shops, a hot chocolate stand and Santa made an appearance. Here some pictures i snapped from our little trip. ENJOY!

Hello! Hello! It's been a while since ive updated this hear blog. I have alot of things planned this up coming year for My Tasty Table so stay tuned. Oven Meals {Lemon Drumsticks w/ Cauliflower Florets}

Sometimes Monday's can be a little difficult to get a yummy meal together for dinner. I try my best to plan something that is really easy and doesn't take to much time. 

I decided to go with this easy oven meal because I can literally throw everything in it and bake.  Enjoy!  


  I used chicken drumsticks but you can use any other meat.    drizzle olive oil first before applying seasonings.      Seasonings I used : salt, dried oregano, and smoked paprika.

 4 lemons, 1 onion sliced, 9 cloves of garlic {do not chop}, 1 bag of cauliflower florets, about a cup of grape tomatoes.    Put all the ingredients in a large baking dish {casserole dish}, bake for 1 hour at 375 degrees. Every 15 minutes or so baste the chicken to make the chicken tender.
